Simply change "memory frequency" or "memory timings" to "user defined" or similar and then you should be able to change it

change system performance to user defined or something then do the same to memory timings and you should be able to change them

Yes... and it you want 6 3 3 2. you'll also need to change that 2.5 to 2.

Be aware that sometimes you need to increase vdimm a bit to permit ram to run at more aggressive timings and remain stable. Some ram seems to like extra voltage even at default speeds. I run Corsair XMS and Geil ram and three boxes, and always run at +0.20 vdimm, and when pushing the overclock, even +0.30 vdimm.

While I know that this doesn't help you set your timings, but it is a good read about that the timings mean.

This article at Toms Hardware Guide is pretty interesting.
