8mb cache in real-world experience.......
I suppose I'm asking about optical drives too, but more specifically in HD's.....what does an 8mb cache bring to the table as far as real-world usefulness goes?

Large file sizes like video will benefit from the larger cache the most. Other than that, I don't think performance is much different than a 2MB cached drive.

Oh well, nothing too exciting, I guess, eh?
I was thinking of replacing an 80G WD 7,200rpm drive (BB series) w/ an 80G WD 7,200 -8mb cache (JB series) drive. But if it don't matter that much, I'll just leave the 2mb version in there.

It's probably more one of those things that if you are going to buy a new drive, get the larger cache! But if you already have a decent drive, leave it alone!

If you do any kind of .wav based multi-track audio with, for example, Adobe Audition (was Cool Edit Pro), Cubase SX, Nuendo, Reason, Cakewalk, Pro Tools, Logic Audio, etc., you'll be able to run a few more tracks, a bit more effects and have faster background mixing/rendering/effect previews and generally faster cut/copy/paste/mix paste/save editing.
For the gamer/general user that doesn't do much multi-track audio or video editing I wouldn't think the 8MB cache would be worth the extra money but if you do any of that kind of computing on a regular basis it's well worth it in performance and productivity gains.

Actually, the performance you gain will be minimal (unless you regularly work with large files), and application-specific at that. Turning off acoustic management on a hard drive will probably increase performance more than a larger cache will.
Other than that, it's probably more about bragging rights...

Well, they say viagra gives a performance gain..but probably not as much as the 8mb cache......
