Is it possible to run two different OS's on one system with two HDD? And if so, how would I set this up?

Ideally 2 Hdd with 2OS is the way to go. I run Linux (Red Hat 9.0)on HDD1 and W2K Server on HDD0. Since Linux and Windows don't like each other I found that by loading W2k first and then installing Linux on the second drive works very well. Linux automatically detected another OS and gives me the option as to which to boot to during start-up. No third-party software needed.

yeah, always install winderz first, and if you want to have two different windows versions you would install the older windows first, like win 98, and then run the setup for the new windows, and instead of overwriting your current OS, just choose the option to install on a different hd, or directory.

I'm assuming you don't mean running 2 O/S's at the same time...

It would probably be less complicated to run two O/S's from one drive, depending on your boot manager(unless you prefer to go with a physical HDD switch).
I use partition magic myself, but there are a multitude of boot managers available (just do a google search for "boot manager").
If you're intent on going with 2 separate bootable HDD's, I would recommend the physical switch to avoid the possibility of a real headache. I've run into problems with one hard drive not wanting to give up it's "active" status when the other tries to boot.
I do agree, however, that a Linux/Windows combo would be best served with two drives.

I am running Windows XP Home right now, but would like to put Windows 95 on one drive while still running XP on my master drive. Is it possible to do without reinstalling or overwriting XP?

Partition hard drive first. Install older OS on one part. then install newer on other partition.

use a program like partition magic to make a new partition on the drive, windows 95 runs on FAT 16 or FAT 32, don't remember.

If you're using partition magic, you'll want to be sure to go with the "install new operating system" link on the left-hand side of the window, to avoid your second O/S as being read as D:/.
Ideally, you'll have 2 C:/ drives, but only one will be visible (set active) at any given time. If you need to transfer files from one to the other (downloads,pics,ect...) you can use the partition browser in partition magic (I think it's only available in version 8).
