How to format an NTFS drive?

I have used an XP bootdisc to re-format a Fat32 drive and re-install XP, however I am not sure how to do the same with an NTFS drive. Can I still use the XP boot disc or will it not work on an NTFS drive.

Itl ask you how you want to format the drive as you reinstall---ntfs or fat32, just read the screen and make the selection you want from the menu...

my C: and D: is an NTFS format too. But my G: andH: are just FAT32 format.
The reason why I change to NTFS format in the first place, was that i'd like my drive in secure and safe. But why defrag doesn't allow me to defrag those NTFS drives?
