If you want a solid fileserver, and you're willing to learn Linux (its nothing like Windows so it will require some effort on your part) it will work great ... Win2k server is very expensive, and most general home users can't afford it. The decision is really up to you
Linux Free/Cheap - will require some effort on your part to learn it
Windows - FAR from free but you're probably more familiar with it and won't require as much effort.
If you get linux look into setting up SAMBA as it will allow your windows machines to talk to linux with permissions etc.
