Voltage switch on back of PSU? 115V/230V?

There's a red voltage switch on the back of my new psu (as well as every other PSU i think.....), and im not sure which to set it too, 115V or 230V?

That represents the input voltage from your electric service provider. In the US it should be set to 115. I don't know what it is in Canada.

Edit - Come to think of the Blackout that occured in the Northeast last month. Parts of Canada were affected by the US powergrid going down so I suspect that Canada is also 115 volts.

North America (115v) vs much (if not all) of Europe (230v)... not sure about other regions.

Canada is 115. So is Mexico as well I believe. It must be difficult to use power bars in Europe with huge 230 plugs for everything.

I've done a bit of travel in the UK and Europe... my power conversion kit had at least four different sets of plug configurations. My recollection is the UK, Germany, Italy and -- I think -- France all had different prong configrations.
