Which do I trust?
I booted up the comp today and the temp readings in the BIOS were 58-60C CPU, 25-27C Motherboard. Then after everything has booted up I run PC Probe (which came with the mobo), and my temps were 44-46C CPU, 23-25C Motherboard. I know this can't be right, which do I believe?
Oh, I'm using an Asus A7N8X Deluxe, AMD Athlon XP "Barton" 2500+, and 1gig PC3200 (dual DDR 400 enabled) Muskin RAM.

I get the same thing with the same board.
I would go with the probe. Nforce2 bios's are funky.

If you want a chance at some more accurate readings (I said a chance)...try updating the BIOS. You can do it easily with Asus Update.
I've been doing some research on the probes for the board, and I believe Asus is adding a few degrees to the "motherboard" reading. It leads you to believe the sensor is in hte northbridge, or even near - it's not. The sensor for the motherboard is in the lower right portion of the board.

I ran Asus Update 3 times, each time it says a newer version of the BIOS is present, installs it, then a security warning pops up, I click open, then it closes.

It's a stretch, but maybe your board is flaky. I highly doubt it though, and I would say as long as your machine can withstand a severe burn-in for several days with CPUBurn-In or a looping 3DMark run, it's considered OK in my book.

Lol, I guess I will trust PC Probe :P. Well, I was running this one program, Hot CPU Tester Pro 3 (Lite Edition) and I got a stop message saying MEMORY_MANAGEMENT

I just went through 1 3DMark run and through it all the max temp (according to PC Probe) was 51C. Oh, and my score was 7633. Gonna run a few more time  .

I just built a system for someone (cheap) and used an ECS L7VMM board, (not a bad board for cheap w/ onboard video that gets a whopping 666 3dMark 2k1) but the same problem, BIOS showed it at 58c (varying from there) but MBM showed 42c full load (xp2000 tbredb w/boxheatsink) after touching the heatsink while fully loaded I concluded the BIOS was wrong about the reading, but they have no update to correct this. I'll trust the software over the BIOS in this case.
If you doubt, touch the heatsink (NOT the fan  ) while it's running, or if you have a thermometer, hold it to the heatsink, if it says 50c, then the BIOS is right, (the core will usually be about 10c higher then where you can get the thermometer)
