Handles simple overclocks (5-15mhz system bus increase)
Low temperatures
operates (boots, shutsdown, opens software, etc) quickly
doesn't crash - ever

Well...my system has been running for over 2 weeks without a reboot with FaD running in the background 24/7.
I'd say it's pretty stable.

Being able to reboot once a week or less and not being forced to reboot multiple times a day.
To me, this is stable:
Being able to run all of the following applications simultaniously without issue:
- a dozen or more browser windows from multiple browsers (Mozilla & IE)
- Photoshop (sometimes with Image Ready)
- ftp access (Explorer.exe)
- image utility (Irfanview & Thumbsplus)
- multiple text editors (Metapad)
- Word
- USENET News reader (Forte Agent)
- Macro utility (Macro Express 2000)
- Instant messenger (ICQ occasionally)
- IRC (Chatzilla or Trillian)
Currently I can do that without much problem. Mostly thanks to Win2k. Occasionally Photoshop is slow at giving up some of it's memory when other program request it...but the system's stable as heck. Runs 24/7. I reboot probably about 1 to 3 times a week (more if I need to install drivers or junk like that).
Windows 2000 Professional SP4
AMD Athlon XP 1700+
512Mb Ram (2x256Mb / pc2100 & pc2400 / Kingston & Corsair)
Soyo Dragon Plus using bios kvxa2ba8

For any of my machines, it's Stable when the only reboots it does are initiated by me
I'd call it stable when I can open as many programs as I want and not have to worry about anything crashing or rebooting.

two of my machines are stable, like nighthawk said "reboots iniated by me"
k6-2, 1800+
256, 512
both Win98se, much tweaks and reghacks in the begining, no OCing, lite gaming, extra fans, much love

If a system can run Prime95 overnight without error I consider it stable to do anything.
