I have laptops with no floppy drive. Can you build boot CDs to run the util to do the ghosting?

yes, it's just like it sounds... create a bootable CD and put GHOST.exe in it too

For example, with Easy CD Creator, you make a bootable floppy disk with GHOST.exe on it, then within Easy CD Creator you tell it to make a bootable CD and it will look to the floppy disk to copy source files from.

Incedently, Does GHOST support other partition types? Or is it just FAT12/FAT16/FAT32 and NTFS? (By that I mean will it work with Ext2 or XFS partitions?)

Last time I checked, it will not partition copy or copy to an image Linux drives. However, if you copy from disk to disk, then you will get a perfect Linux drive still.

Someone recently posted a link to a great site that explained the basic of Norton Ghost in a very good and simple manner. Anyone remember where it is? I seached the forums but did not readily come accross it.

nukes: it will create an image of all the file systems you mentioned (plus a few others I believe). It can put that created image on any partition that the OS you boot with, to run Ghost.exe, can access.
