I use CDex to encode mp3s and rip CDs. It's a great program and free. You can throw the LAME encoder in it, if you like.

The second link contains a special version of CDex with the LAME encoder/some tweaks in it and a web guide on how to use the program all the way from encoding to titles and playlists. If it were me (and I did do this), I'd just start with the second link, download all the stuff, read the guide and start ripping/encoding.
I have used CDex for 2-3 years and that guide is easiest I've seen. The CDex website also has a good forum setup, if you want to read about the nitty gritties like, which beta of LAME encodes best.
