If you modify XP chips, they will appear to be MP's. If you google it, you will find some good tutorials on crossing the bridges.

The two I hear most about are the Tyan Tiger(?) and there's an Asus one, don't remember the model number off hand though. Good luck on finding a good deal on one though...

I've heard good things about overclocking with the MSI board, but I have the gigabyte ga-7dpxdw+ and my chips are overclocked from 1200 to 1350 with no stability issues.

I have the MSI board (KD7 Master L), its the only one you can really overclock with now, the Gigabyte offers a much limited O/C ability.
I'd recommend getting the MP over the XP, as the MPs are unlocked out of the factory, so you can get to the multiplier as well as the FSB easily.
But note that overclocking is limited on the board, my 1800+ can only get to 2200+, since the FSB highest setting is 144.
Edite Note: Want to add that both Tyan model types are un-overclockable. The 2460 and its thunder brother board, as well as the 2466 and its thunder brother board have absolutely no setting you can change in CMOS setup.

Hmm. I may just wait on a dual board and go with the new GA board that is suposedly the ultimate nForce2 OCing board. I plan on building a dual opteron system next year.

Aren't all Opteron's all PCI boards? I tried checking up on them and found that they all seem to have no AGP port. Correct me if I am wrong.

Even if that is true Im sure that will change in the future. But the new nVidia cards will use the new PCI starndard that is comming out later this year.
