I dont' think it matters much with SDRAM, although if you buy the 256 stick you'll still have 2 slots open for upgrading later, whereas if you buy the 2 128's you'll only have one slot open later.

Buying 2 sticks only improves performance with DDR RAM.

There will only the smallest performance increase with you use two sticks (probably less than 1%) Using 1 x 256 DIMM would be cheaper and as said by vass, it allows a better upgrade path.

But still,

if you were to have 2 x 128, and 1 fails, you'd still have 128 to work with, untill you can buy another one.

That would be a problem if you had 1 x 256.

If you are overclocking a single stick can prove more stable and possibly offer higher performance then 2 "halfsticks" of the same memory...
