Computer freaking out - dual monitors?

Tough problem to type... but here goes.

I recently upgraded my new Sony Vaio computer to a dual head video card and I am running 2 - 19" LCD's. The problem is... that towards the end of a work day my computer begins to FREAK out. If I open an additional "internet explorer" window or some application... my computer locks up and begins blinking all over the place. The mouse becomes eratic and I can not even use the ctrl-alt-delete.

I usually have Oulook and about 4 internet explorer windows open.... nothing too serious. I thought it was memory so I upgraded from 512mb's to 1.5Gbs! Still happens at the end of a long day?!?!?!
