How do you ripen Avocados?

I've got a dozen full-size fuente avocados I hand-picked from an orchard last Sunday and they have refused to soften. Someone said to put them in a freezer bag with a bit of water to "humidify" them and increase ripening rate. I'm looking for a solution in time for the Bowl kickoff. Any veggie/fruit aficionados have a solution? Am I too late? A killer guacamole recipe would be helpful also.

Put them in a paper bag (freezer bag is okay); leave them on the counter top. Cross your fingers.

(Bananas, lemons, tomatoes all produce ethylene gas as a ripening hormone; trapping it in a bag speeds the process. Avocados may well work the same.)

Brown paper bag on top of the refrig. then only time will prevail. try Placing a slice of apple in the bag it speeds up the ripening of Pineapples and the blooming of bromeliads. something about the gas the apples give off. I forget the name of the gas now but it is the same thats used to color tomatoes.

hmm .. I don't know about that method.

Ripening fruit such as pears, peaches, and the like, can be hastened by putting them in a regular brown paper bag, closing the top and leaving out in room temp. Avocados should be no different, imo. Unless you picked them way too early, they should be ready by Sunday.

Another tip I found:

http://food4.epicurious.com/HyperNew...00/3863/2.html
Put your unripe avocados with your apples
and bananas. I read somewhere that there are
ripening agents in the skins which help
nearby fruit ripen. It seems to really work
for me -- sometimes sooner than I want!

I think TKOP or Angela or Surreal or Sweet or Theo or ?? would be a good bet for the recipe

Paper bag (its gotta breathe to ripen)---Fuerte is its name...
To speed ripening put in a warm spot like ontop of the fridge...
Cant be rushed in any other way...
Dont ruin em---wait :-)

(Glad you reminded me---got a half dozen ontop of the fridge id almost forgotten about)
