My Mom growing up when times were alot leaner got used to eating "organ meats" including brains, hearts, kidneys, oxtails, liver, thymus gland, tripe, feet, tongue etc---of course I was encouraged to eat this as well, she used to pull it off by disguising what I was eating, when I finally caught on to her I just about ate NO meat whatsoever (an occasional cheeseburger) till after I was 18 and out of the house...

Sounds better then the mystery meat scrambled eggs (brain mixed into the eggs then fried) my Mom would attempt to serve up on a Sat morning...

Personally, I'm a big fan of menudo, and make a pretty good version (for a gringo). I also like veal sweetbreads. I think it's the egg batter, deep-fried aspect of this I find unappealing. Perhaps it needs a nice veal reduction sauce with a hint of thyme and a splash of madeira? |
