Help! I've procrastinated too long.
I need a good recipe for a green bean dish..
I was going to take corn, I have a corn recipe I make in the summer but you need fresh corn.
I tried it with frozen last night and it was horrible.
Green Beans freeze well, so I've got to try that route.
What is a good sauce or flavoring for people that aren't big veggie eaters??? (no Durkey Onion Rings please  )

Green beans? Do you mean like long French beans, or flageolet beans?

I've made an Indian dish, Gujerati-style Green Beans, that my wife (who's a BIG veggie lover) likes and that I (a meat eater) can tolerate.
I don't have the exact recipe here at work, but basically you --
1) Blanch 1 lb. beans and drain
2) Saute 1 T black mustard seeds in 1-2 T oil
3) Add 2-3-? cloves garlic
3) Add red pepper flakes to taste
4) Throw in beans
5) Add salt and a little sugar
6) Continue cooking until tender
So the dish is a little (or a lot, depending) spicy, which may entice non vegetable-lovers to try it.
If this sounds interesting at all, I can post the actual recipe later. It's from a cookbook by Madhur Jaffrey, who does Indian cooking shows for the BBC and elsewhere.

My grandmother used to make this super awesome green beans and bacon dish for holidays. Mmmmmmmmm. Don't got a recipe handy, but you could probably find something on the net!

we have enjoyed this recipe
"Silly Green Beans","S",","1 lb. green beans","1 Tbls. fresh dill (when chopped)","1 Tbl. fresh chives (when chopped)","1 Tbl. butter","1/2 Tsp. ground all spice","Seasoning to taste",,,,,,,"Bring a small amount of water to a boil in a medium sauce pan. Wash, trim and string the green beans. Place the steamer insert in the sauce pan and steam the beans until they are crisp-tender, 4-5 minutes. Chop the dill, Chop the chives. Drain the beans and melt the butter in the saucepan. Return the beans to the saucepan, sprinkle with the dill, the chives and the allspice. Season to taste and toss to coat."

a little sugar
That's all you need. cook it down at least twice, three times is better. Perfect green beans.
