Texas chili judge

LOL @ Frank, but I'm the same way..... Mild is smokin' to me.... But I guess if you ate it all the time... you would get used to it...

It is Chili time in Texas... It is cold and that is when Chili tastes the best. If you like hot stuff.....Here is a great recipe for you....You will have to excuse me.. I don't have a clue as what it is called. My wife brought it home from school where she teaches. You simmer some pork....small chunkes in a broth that tastes like Chili/Menudo.... Into the pork goes hominy...about 3 times as much as the pork...I am in luck...wife just called and the name of this recipe is Pozole. Anyway.....it has a taste somewhere between Chili and Menudo...more towards Menudo, depending on how it is seasoned.... Anyway after cooking it for a few hours.....Chop up some onions and also some lettuce...on a bowl full of Pozole put a layer of onions and load the top with the chopped lettuce and a big squeeze of lime juice over the lettuce.. This is some great tasting stuff....and don't forget either a Habanero, Jalapeno or Serano chili or all of them along with it to make it tasty.... If you can't handle the fire...remove the seeds and cut it up in the Pozole... You should be able to find the recipe some where on the internet....

It is better than delicious.....Maybe I can get some Chili this weekend...
Those Chili cookoffs are great.....and deer meat makes the best chili...
