Anybody know how to make a good Beef Stew?

It just occurred to me, (what with the recent recipe threads) that I've been without a decent beef stew recipe...I keep trying various recipes (like the Good Housekeeping book...they advocate using V-8 Juice and bullion....the results are about as disappointing as you might expect... )

A week ago, I did one up using a Schilling seasoning packet...actually, it wasn't bad, but I'm distrustful of those things (sodium and other chemical nastiness).

When I was a kid, I was a big fan of Dinty Moore beef stew...but I can't take that jazz anymore. WAY too much junk in it.

Anybody have a good, rich, HONEST beef stew recipe?

Well, what we do, if get some good quality prime beef cuts, cube 'em, cut up all sorts of vegies (your taste - we use potatoes, carrots, peas, corn, capsicum), then we stew 'em all in a big pot and add some pasta sauce (we use Dolmio redwine sauce - dunno if it's sold in the US or not)) and some herbs (whatever herbs ya want).

Is very simple to make. Even I can do it!

Tastes OK to us!!

The Foodnetwork on cable TV or online is your friend---killer recipes are available from all their on TV chefs and beyond--- http://www.foodnetwork.com (use search function, duhhh)

Im sure some home recipes that satisfy can be suggested as well from eager Techimo eaters...

The stock is key---get your pal (again) the local butcher to set you up with some killer marrow bones you can roast to start the beefstock with---

Root veggies are my fave---carrots, onion/leak, turnip, rutabaga, potato, parsnip,--- celery, parsley, thyme, basil, rosemary tomato? peas?
Choose your meat well and send out the invites!

A very small amount of liquid smoke seems to help the flavor of nearly any beef stew recipe IMO. Don't forget a few drops of hot sauce and whorchestsher sauce as well.

Oh, that's interesting, and TRUE!! It IS root veggies that work in beef stew....funny!

It's over ground veggies that work on a cheeseburger...plus cheese...

I am really hoping for a recipe that starts out like this:

"Using a big black Dutch Oven, add and sear the beef against the hot sides of the pot, adding red wine as indicated..."

The best recipes I've seen so far always begin thusly:

"Cube the beef, and put in a bag of all-purpose flour.
Heat the Dutch oven, add about 2 T. of oil. Add beef..." etc.

Does anybody have an Aunt Petunia (likely from Virginia, or some place like that in the South, where the really awesome cooks come from?) who might have a great recipe?

Hey, the future of TechIMO might depend on it...

well....not really, but...

My mouths watering---lightly flour or it could cloud the intense clear full flavored stock you went to the trouble to make and add something unneccessary---cook all those sweet flavor intensifying root vegetables in the yummy beefstock you so lovingly prepared after your cast iron browned beef has added its own goodness---(in the same cast iron vessel---YUM!) timing and cutting ingredients to size so everything finishes together without overcooking anything is key to getting a fine yummy yum yum result...

Here's how I make mine. Everything goes in the pot and bake in oven for 2 1/2 hrs at 350 degrees.

Season and brown 2 pds stew meat in pan with oil and dump all in pot.
2 family size cans of mushroom soup.
cut up the following:
1 large onion (or 2 small)
8 or 9 medium potatoes
small pack of baby carrots
5 or 6 celery sticks

Stir 'em all in and cover.

Find out who inherited her recipe box CE---I blew it and let my sister in law get my Mom and her Mom's 100+ years of cooking history on 3x5 cards---she promptly DUMPED its contents and put her dogs veterinary history in it---I could have killed the b_itch, and I dont mean the dog...
