It's fish-stomping time in Cambodia!
Yum, yum. Quote:
"Up and down, up and down," said Chhim Heng, 65, as she swayed rhythmically in her loose-woven basket. "Then dip it into the water to wash out the fat and the guts. Stomp and rinse, stomp and rinse. We do it the way our parents taught us.'"
Sean Soun, 52, is a professional stomper and can earn as much as a dollar a day by taking over for those who grow exhausted.
Of course, anyone can do the job just by stomping, he said. But there is an expertise for everything.
"I have my own method, bending my feet to push the fat out," he said. "But for that I have to wear sandals so the bones don't cut me. Most people don't wear sandals, and they have to stomp carefully."
