Beef Jerky Recipes

On a whim I picked up some at a convenience store. I forgot how much I loved this stuff.

Expensive though, so I thought I would make my own. Problem is, I have no idea how.

So I turn to you folks. Any advice or recipes? I am a wimp about hot stuff, but I love teriyaki.

I was up in cleveland 2 weeks ago at a friends, and a friend of her mom's came over and had some venison jerky.. Mmmmm goooood stuff
sorry don't know any good recipes though

It's expensive because you start with 80 lbs of meat and get 3 ounces of jerky!

Hi fatal xception, is it cold enough for 'ya yet?

Here's one that I make:

3 lbs. Beef (Round steak or Rump roast)
1 1/2 cup Soy Sauce*
1 1/2 cup Worcestershire Sauce*
1 Tsp. Liquid Smoke
1 Tsp. Garlic powder
1 Tsp. Onion powder
1 Tsp. Accent(TM) (Optional)
1 Tsp. Pepper
1 Tsp. Salt
1/2 Tsp. Ground red pepper (Optional)
2 Tbsp. Barbeque sauce (Optional)

* = Or Teriyaki sauce

(Note: You can also experiment with different seasonings as desired.)

For larger batches, double or triple measurements.
(Make sure you have enough liquid to cover meat while marinating)

Trim any fat from meat, then cut into 1/4 in. thick strips.
Put strips into a Tupperware(TM) bowl, and mix in marinade.
Cover and refrigerate for 24 hours, stirring occasionally.

Then, remove strips from marinade and drain them.
Stick toothpicks through the ends of each strip and hang them on oven rack.
Dry them at a low oven setting (100'-125') for 8-10 hours, until nearly dried out.
(Leave oven door cracked open a bit during drying)

Store finished product in a tightly sealed container.

Enjoy!


Writing this has reminded me of a place up in Vermont where I bought some Ham jerky.
Now that was good stuff!

/me goes off to Google to find a recipe for that...

Thanks Aero, I'll have to try that. It was 14 degrees with snow. I stepped out to enjoy the fresh snow and as old man winter wrapped his arms around me, all I could think of was it is #$$@!#@#$ cold!

Well its been a long time since I done that. but ya need to soak the beef first to get that flavor you want and then get a smoker. One of those outdoor smokers best. and Slow cook it for most of the day. Pretty darn good once its done. Can use whatever types of chips you want to use, I usally used mequite (sp?) chips.

Been about oh 7 or 8 years since I done it tho. :/ Love the stuff tho. im like you I prefer teryaki better than the hot stuff.
