Pumpkin Pie

Get pie crust from dairy section. Let crust get to room temp, then mold into pie pan. Prick all bottom and sides of the crust. Add some sugar to your choice of pumpkin pie spices, like cinnamon, ground ginger, ground ginger, ground cloves. Let this mixture of sugar and spice flow into all of the crevaces of the crust. Make more pinches into crust with fork and repeat turning crust to fill the spaces. Mmmm this makes a tasty crust.

Get two pie pumpkins, just about the size of a small melon. Cut open, de-seed, spray with pam, bake in 400 degree oven for 40 mins. When cooled, Mash like potatoes. (measure)

Not enuf for 2 pies, (need 4 cups), so grab a can of pumpkin puree.

Add 1 T. to 4 T. flour, 1/2 tsp vanilla, 1 tsp salt, 4 eggs, pumpkin pie spice (about 4 tsp).

Add sugar ( about 1 1/2 cups)... we used 2 heaping tablespoons of light brown sugar with the rest a turbinado/cajun/ of reg sugar.

Mix in 1 can of sweetended condensed milk and 1 can of condensed milk.

Oven should be at 425 degrees.

Bake for 15 minutes, turn down to 350 degrees and bake 40-50 minutes.

This is the best pie I ever made. Mmmmm. It sure was a pain to get those tiny pumpkins@ $2/lb, but they should be cheaper in other areas of the country.

I just used a can of whipped cream on top. Don't wanna go into the 1/2 cup whipping cream, whipped till soft peaks with 1 T. sugar and for extra flavor, 1/2 tspp of ground ginger.

Hmmmm... I was just wondering where all those delicious pumpkin pies came from, and now I know... Sweet made them

BTW, can you just use the pulp from the pumpkin the Jack-O-Lantern was made from instead of buying pumpkin puree?

for some reason i think i remember hearing that the "guts" from big pumpkins do not make good pie.

From what I've been reading the smaller the pumpkin, the better it is for a pie.

Although all of the seeds can be cleaned and baked and salted for a treat... (do a google search for a recipe)

Most pumpkins are specifically grown for either baking or Jack's. Jack's are not suppose to make a good pie, but, I'm not sure.....

I do believe the smaller the pumpkin, the tastier???????

Aieeeee!!! Sweet! I told him you could only use the stuff in the can! He was talking about me making pie after we carve a pumpkin!!

And apparently hunnie, I need to leave the cooking to you. I didn't know there were different pumpkins for making Jackolanterns and for baking.

I've made a pie or two, and I can tell you the med sized pumkins will make a good pie. I think the main thing required is a good cook. Followed buy a good recipe, and Sweet's sounds really good.
