Talk Happy Birthday to me.....

I know I'm not a gigantic poster here, but I do live with y'all a few hours a week...

I'm making my day special by cooking a big pot of Shrimp Creole and a 7 layer salad. I plan to bake a white on white cake for later. I get to sit on the couch and watch the Saints destroy the Lions and cheer yell and holler. I got a card from my in-laws with some cash and a phone call from em too. (Hubby died a few yrs back) Bro & Sis just don't remember these things. Boyfriend gave me a beautiful present early.

Still waitin fer my little one's hug...... shouldn't be too much longer,he's bein good and doin homework

so y'all have a good day, I'm gonna enjoy this one with a smile and I wanna laugh alot!!!!

And GOOOO SAINTS!!!!!!

yea, I was born in Detroit too and grew up in St. Clair Shores fer a couple decades.... Saints down 13-0, oops....

Shahani, be glad to try it, but it might be better ifn I just post my recipe here for anyone to try.... after da game!!!! lol

well, the games not over yet but I got this ready... This is a real special recipe for me, one of my first and best cajun dishes. I feel happy sharing it here with y'all....

Note: I make this a little different each time, but this is the real recipe…

SHRIMP CREOLE

Ingredients:
Pam spray on all pots
1 pkg. Martin’s andoullie sausage
1 pkg. Pork tasso
1 pound good bacon
½ bunch Celery, chopped
equal onion, chopped
bell pepper,red etc. as desired (1 is fine)
1 – 2 entire garlic flowers, chopped fine
2 - 4 small tomato sauce
1 rotel
1 small tomato paste
2-3 lg cans diced tomatoes
few ounces taylor sweet sherry
s&P
3 – 4 whole fresh bay leaves
pinches of sugar
worchestire
Tabasco
2-4 cans Chicken broth ( can make shrimp broth with head and shells)
1-2 bunches parsley
1-2 bunches green onion
five pounds of extra large shrimp


cook bacon slow on low. Let all the fat render. Remove bacon. (sometimes I add it in, sometimes I don’t) Add trinity (bell,celery,onion) and sauté till clear or till lightly browned (your choice) (if you had too good bacon and not enough oil for the sauté, you can add some butter) add garlic at end to cook slightly. Can stop at this point and continue the next day.

Now in a real big pot, add the sautéed veges and all of the tomato products and stock.

Add a little salt and pepper pinch of sugar, dash of worchestire and bay leaves.

Let this mixture come to a boil, then turn immediately to simmer so as to not burn anything on the bottom of the pot. Let this simmer for at least 2 hours. Keep stirring casually.

De-head, de-shell and de-vein da shrimp. Sometimes if da shrimp are real real big, I’ll cut em in half lengthwise. The shells and heads are great to put into a pot with water (can add onion, celery, bay, peppercorns) to make a stock.)

Now get all of the parsley and green onions chopped up and ready. Add shrimp to pot, cook till done, only a few minutes. The shrimp will turn color when done. Add the parsley and green onions. Taste. Adjust seasoning with Tabasco. Serve immediately in a bowl with rice. French garlic bread and a salad go real well with this.

Note: can add any other seafood (may need to cook a bit longer) or oyster, scallops, etc. brown rice is real good with this too. If you don’t want to do 5# of shrimp, you can cut down on everyting. BTW 5# of jumbo’s fresh here are $5.69/lb. This does freeze well.
