Meatloaf, YUMMMM!

I have gotten a hold of this meatloaf recipe, and I wanted to share it with you all. It is simple to make, and the taste is something else!

Preheat oven to 350 degrees

1 lb of ground beef
1 lb of ground turkey
1 lb ground pork
2-3 small to medium yellow onions
1 16 oz jar of salsa if you have a Meijer's nearby you, try their Corn and black bean salsa)
2 to 3 tbsp brown sugar (More if you are not using the ground beef)
1 large egg per lb of meat
1/2 to 1 cup INSTANT rice
Salt and Pepper to taste


Add all ingreadents to large bowl, mix thoroughly, place mixture into large loaf pan, bake for aprox 1 to 1 1/2 hours, checking to see if it is cooked thru the middle.

Serves 4 to 6 people

Now THAT'S something I'd never thought of seeing on TechIMO - RECIPES!

Hey, now, that sounds pretty good!

Usually, Meatloaf is one of those things you learn to steer clear of in restaurants, with the goofy ketchup "sauce", etc. Avoid like the plague! But yours...I think I'll try that recipe! Thanks!

Fair is fair; so here's one of MY little wonders, sounds weird, easy to make, but nobody believes it. There are NEVER any leftovers.

Chicken Asparagus Casserole

2 whole chicken breasts--boned
1/4 teasp. pepper
1/2 cup corn oil
Fresh asparagus, about 2 big fistfuls
1 can cream of chicken soup
1/2 cup mayonnaise
1 teasp. lemon juice
1/2 teasp. Curry powder (maybe more, but be careful )
1 cup SHARP Cheddar cheese
don't bother w/ salt...

Okay, cut the chicken into 2" x 4" pieces. Sprinkle w/pepper.
Cook in oil over low heat 5 or 6 min. till white. Drain.

Cut asparagus into 1-1/2" to 2" pieces, and peel any stalk thicker than your fingers. Throw the asparagus pieces into a large glass measuring cup, cover loosely with plastic, microwave about 3 minutes (you want it about half done.)

I forgot to tell you to preheat the oven to 350 degrees, so hop to it.

Okay, the hard work is now done. You can also do the previous stuff before anybody gets there, if your trying to impress your guests. (You will! )

Take a 9" square pan, or if you have one of those cool casserole dishes, use that. Anyway, toss the asparagus pieces in first, spread 'em around all artistic-like, then cover THAT with the chicken.

Mix up the soup, mayo, lemon juice and curry powder; pour this over the rest of it. Shove it in the oven and forget about it for 25 minutes....then take the grated cheddar, put it all over the top and bake for another 5 minutes.

I like to serve it right at the table, maybe with some crusty french bread. You don't need anything else. It's really, really good!

Don't ask me why but I can't eat it....something about the words meat and LOAF being put together....makes my stomach turn..

Now with the left overs we can make cold meatloaf sandwiches with Catsup or Ketchup. Now that is Yummy.

Here's one of my favorites (and it's easy too).

Mediterranean Quesadillas

Ingredients (per quesadilla)

2 flour tortillas
1 chicken breast (cooked and shredded)
1 cup mozzarella shredded cheese
feta cheese
1-2 roma tomatoes

Take a strip of aluminum foil a little larger than the tortilla and spray it with cooking spray. Put 1 tortilla on it.
Spread mozzarella cheese evenly on tortilla.
Spread feta cheese. The amount is up to you. Feta cheese has a tangy flavor to it, so I would certainly use it sparingly. The kind I buy has garlic and other herbs in it and it is crumbled so I sprinkle it over the whole thing.
Spread shredded chicken and roma tomatoes.
Place the 2nd tortilla over whole thing.
Take 2nd strip of aluminum foil strip (same size), spray it with cooking spray, place it over whole quesadilla and fold edges to seal. Poke holes at top to vent.
I use the BBQ to grill 5 minutes on each side.

Different and yummy.
