Hey, now, that sounds pretty good!
Usually, Meatloaf is one of those things you learn to steer clear of in restaurants, with the goofy ketchup "sauce", etc. Avoid like the plague!

Fair is fair; so here's one of MY little wonders, sounds weird, easy to make, but nobody believes it. There are NEVER any leftovers.
Chicken Asparagus Casserole
2 whole chicken breasts--boned
1/4 teasp. pepper
1/2 cup corn oil
Fresh asparagus, about 2 big fistfuls
1 can cream of chicken soup
1/2 cup mayonnaise
1 teasp. lemon juice
1/2 teasp. Curry powder (maybe more, but be careful

)
1 cup SHARP Cheddar cheese
don't bother w/ salt...
Okay, cut the chicken into 2" x 4" pieces. Sprinkle w/pepper.
Cook in oil over low heat 5 or 6 min. till white. Drain.
Cut asparagus into 1-1/2" to 2" pieces, and peel any stalk thicker than your fingers. Throw the asparagus pieces into a large glass measuring cup, cover loosely with plastic, microwave about 3 minutes (you want it about half done.)
I forgot to tell you to preheat the oven to 350 degrees, so hop to it.
Okay, the hard work is now done. You can also do the previous stuff before anybody gets there, if your trying to impress your guests. (You will!

Take a 9" square pan, or if you have one of those cool casserole dishes, use that. Anyway, toss the asparagus pieces in first, spread 'em around all artistic-like, then cover THAT with the chicken.
Mix up the soup, mayo, lemon juice and curry powder; pour this over the rest of it. Shove it in the oven and forget about it for 25 minutes....then take the grated cheddar, put it all over the top and bake for another 5 minutes.
I like to serve it right at the table, maybe with some crusty french bread. You don't need anything else. It's really, really good!
