what's for dinner?

we are having some friends over for dinner and I am tired of the same ole stuff, usually lasagna. I am going shopping in a few minutes so does anyone have any yummy ideas, not too fancy just yummy. thanks ruby

Heya, Ruby! Well, I was feeling creative the other night and Deni had picked up some Portobello mushrooms at the Farmer's Market...

These things are HUGE, meaty, sorta flat-ish mushrooms, I'd had stuffed ones in a restaurant once, they were GREAT!

So I figured they'd go to waste if I didn't make something out of them (Deni isn't the greatest cook, and I'm only a little better.).

Rooting about, I found some Stouffer's spinach (sort of like creamed spinach) and some canned crab meat! YAY! One big mess, comin' up! I mixed these together in a bowl.

Two strong flavors, let 'em fight it out, I thought. Then, I took the mushroom stems and chopped them up fine, added that. HAH! We're cookin' now!

How about garlic? It'll referee the battle between the spinach and crab meat! Oh, oh, too much, hmmm....okay, that's what these little crackers are for, so I crushed them up and threw them in. Then I spied one of those little soy sauce packets and figured it wouldn't be missed. In it goes.

Then I took THAT mess and put it all into the little "bowls" that the mushrooms are like without the stems...drizzle a little olive oil on top, I think I saw that on TV once....

Bake at the ol' reliable 350 degrees, I figured about 15 minutes.

Well, that was too long, so cut it back to ten. But still, OUTASITE!! Really, really good! And your guests will think you're a gourmet chef or something!

I just got back from grocery shopping. I'm going to make beef stew so you might want to try this sometime.

2 lbs stew meat ( or pot roast)
1 stalk of celery
2 onions (big)
8 (or more) large potatoes
1 small package baby carrots
2 cans family sized cream of mushrooms

Brown the meat in pan and season with your favorites.
Dice celery, onions, and carrots.
Cut each potato in 8 pieces.
Throw the vegs in pot with soup.
Put meat in there too juice and all.
Cook at 350 in oven for 3 hrs.

Enjoy! It's so good here that there are no leftover.

I had two ideas one was for Chicken morengo, and the other was for pecan crusted salmon, too much of a choice so I am making both, with romane salad, (strawberrys, pecans, rasberry vinigerette dressing), noodles, (for the left over sauce from chicken) and pineapple ambrosia upside-down cake. thanks for all the great ideas.
