Well, with Prime95, the torture test basically as Endobiotic said, runs a number set with known good results. If your CPU starts getting weird for any reason, then a couple of things can happen. Either your system will lock-up/reboot/BSOD, or your system will come up with incorrect results within the number set. Some review sites run Prime95 torture tests for 24 hours, I usually just leave it running for an hour or so, and see how it does. Then I'll run 2 or 3 runs of 3Dmark2k1 and see if it crashes or anything like that. If it doesn't, great, I'll bump it up another couple MHz and see what happens then. If it doesn't make it, I'll bump up the voltage another notch, maybe two, and try again. If my CPU is getting hot, I'll knock it down to the last FSB it was happy at and leave it there.
